Alipús was founded in 1999 as an alternative project of the Los Danzantes Distillery, with the idea of creating a map of Oaxaca through the different expressions of its mezcals. These mezcals differ from one another based on the conditions in which they are produced, including the soil, water, and climate of each area, that is, the terruño.
