Process: Agave piñas are roasted in a pit oven, smashed with mallet on a wood canoe and fermented in wood vats. Double discontinous distillation in clay pots. Alipús Project was created and developed by Los Danzantes Distillery in 1999. This project has enhanced rural development through the production and commercialization of unaged mezcals produced in different towns in Oaxaca. Since 2012, Los Danzantes Distillery - through the Maguey Project - has worked on the agave preservation, preventing its extinction and driving positive impact on its diversity and sustainability.
